Le Grand Véfour
One of the oldest restaurants in Paris, serving under the arcades of the Palais-Royal since 1784. Its painted ceilings, gilt mirrors and Directoire banquettes — where Napoleon, Colette and Jean Cocteau once sat — make it a listed historic monument as much as a dining room. The cuisine is refined modern French, built on classical technique and the finest seasonal produce.
The chef
For years the kitchen was led by chef Guy Martin, a largely self-taught cook and Michelin-starred figure of the Paris scene, whose signature dishes — from ravioles de foie gras to the palet chocolate — became classics of the house.
